If our ancestors had enjoyed the resources we have, they no doubt would have avoided many of the hazards inherent in vine cultivation and the vinification, maturation and conservation of wines.

Reflecting on our history has encouraged us to eliminate or improve practices which, both in their spirit and form, were not consistent with the production of authentic wines.

What is more, at Domaine Ponsot we do not in any way deprive ourselves of what science has to offer in the 21^st century, while maintaining our goal of offering you wines that are as respectful of their origins as possible.
